Beets are a root vegetable most commonly deep red or purple. They are a great source of fiber, folate (vitamin B9), manganese, potassium, iron, and vitamin C.
- Soil: Well-drained, loamy soil
- Water: Regular watering, do not let soil dry out
- Light: Full sun to partial shade
- Sowing Method: Direct sow

Planting Instructions: Sow beet seeds 1/2 inch deep and about 1-2 inches apart. Thin the seedlings to 3-4 inches apart once they are 4-5 inches tall.
Harvest Instructions: Harvest beets when they are about 1.5-3 inches in diameter. The greens can also be harvested and eaten.
