Zucchini

Cucurbita pepo

Zucchini is a summer squash which can reach nearly a meter in length, but is usually harvested at half that size or less. Along with certain other squashes and pumpkins, it belongs to the species Cucurbita pepo.

Planting Instructions

Planting Instructions: Sow zucchini seeds in the ground when the soil has warmed to 70 degrees F. Plant seeds 1 inch deep in hills that are 2 to 3 feet apart. Each hill should have 2 to 3 seeds. When the plants are 2 inches tall, thin to 2 plants per hill.

Harvest Instructions: Harvest zucchini when the fruits are small. This will result in a more tender and flavorful squash. Cut the squash off the vine rather than pulling them off.
